Restaurant Salsa for Under 1 Dollar in Under 1 Minute!

No, I'm not kidding.

I thought about naming this post "How to Get Your Very Picky Teenage Son to Eat Vegetables," because that's how it came about.
For a child who has had a life-long aversion to vegetables and all things good-for-you, he somehow loves restaurant salsa and store-bought salsa in the jar.  In his mind there is no connection to vegetables here.

However, if I buy tomatoes and chop them up to make fresh salsa, which is amazing, nope. He won't eat it.
Go figure.

So...I bought canned tomatoes and made salsa in the blender and let him think it was store-bought.
I don't count that as lying.  exactly.

And he loved it.

In fact we all did.  And do.

Now it's my go-to.

In fact, we had it for lunch today, per his request.  I thought, why not?  It's vegetables!  ;)

Here's all there is to it:


Step 1. Purchase a $0.98 can of flavored diced tomatoes from the grocery store.


Step 2. Puree in the blender for a few seconds.

That's it.  Done.





Easy.  check
Cheap.  check
Delicious.  check

Win.  Win.  Win.


And speaking of winning, this would be the perfect super bowl party snack.

But I don't even watch the super bowl, so I'll just make it for birthday parties...
or pot-lucks...
or lunch.  :)

*Note: I like to add a pinch of garlic salt, a squeeze of lime, and a bunch of fresh, chopped cilantro (the more, the better) if I have them on hand, but if not, it's still really good.  And the kids never notice or care, anyway.
