It's that time of year where certain produce is plentiful, like squash and cucumbers. I threw some together for a salad and loved the results. It's great for a quick side-dish on the supper table or the picnic table. Travels well, too. It's even good as a leftover. Little things like that make me happy. ;)
Wash several medium-sized squash and cucumbers (equal number of each.)
Cut the ends off the squash and dice the squash.
Peel and dice the cucumbers. (Unless they are seedless cucumbers, I remove the seeds and the mushy part around the seeds.)
Toss the veggies with a drizzle of olive oil and 1 teaspoon each of salt and black pepper ( or to taste.)
At this point, you can add other things if you like, depending on what you have on hand, like the grape tomatoes I added today, or finely diced red onion (which I usually add) or your favorite herb, like basil or dill.
But this simple little salad really does taste good just as it is. With only two ingredients! It's cool fresh taste is great with steak, burgers, or fish.
